Automated Punch

Unattended punch-up operation — set your schedule on the controller or your smartphone. This unique "punch-up" concept is only possible with flexible bag technology, and is the secret to GOfermentor's superior extraction of color and flavor.

Built-in Press

Insert the pressing tube and pump out the wine. The GOfermentor uses the secondary inflation chamber as a built-in bladder press. Pressing takes less than an hour — no separate press needed.

No Cleaning

System Components

Two Core Components

The GOfermentor consists of two main components: GObase and Controller. Single-use GOliners sold separately.

GOfermentor System Components

GObase

A reusable, rigid outer container that holds the GOliner. Since wine never contacts the GObase, it can be reused with a simple wipe down. It folds for compact storage.

Controller

Advanced instrumentation that logs data, events, and alarms. A smartphone app allows remote monitoring and control over the Internet from anywhere in the world.

Cap Management

Revolutionary Automated Punch-Up

The primary challenge of red wine fermentation is managing the "cap" — the solids that float to the surface from CO2. Instead of forcing the cap down, the GOfermentor pushes liquid upward by inflating a secondary chamber for superior extraction of color and flavor.

Initiate

The electric vent valve opens, venting CO2 to atmosphere and deflating the primary chamber.

Squeeze

The secondary chamber rapidly inflates via built-in fan, squeezing the primary chamber upward and forcing liquid through the cap. Pulsed pressure breaks up the cap.

Complete

The fan shuts off, secondary chamber deflates, and the electric vent closes. The primary chamber repressurizes as CO2 builds. Excess pressure is automatically vented.

Fill

Insert GOliner into GObase. Connect destemmer/crusher via 2" Triclamp port, or fill by gravity or by hand.

Ferment

Primary chamber inflates from CO2. Set automated punch schedule via controller or smartphone app. Sample anytime via fill port.

Press

Stop punching 2 days before pressing. Insert pressing tube, pump out free-run wine, then activate PRESS to squeeze pomace. Under 1 hour with one operator.

Discard

Discard the GOliner with waste pomace. No cleaning, no steaming, no detergents — GObase gets a simple wipe down.

White Wine

Sealed design preserves delicate aromatics with no oxidation.

Fill & Press

Fill primary chamber with 200–1,000 lbs crushed grapes. Insert Press Tube, connect pump, direct juice into a secondary GOliner.

Extract

Activate PRESS function to extract all juice. Sealed GOliner provides minimal air contact, preserving aromatics and enabling low-sulfite wines.

Ferment

Juice ferments in the secondary GOliner. Sealed bag keeps air out. Use GOcooler for lower temperatures white wines prefer. Bâtonnage via punch mechanism stirs lees.

Age

Pump contents to SmartBarrel liners, traditional barrels, or other aging equipment. Discard the GOliner — no cleaning required.

Smart Monitoring

Advanced Instrumentation & Remote Control

The advanced instrumentation logs data, events, and alarms throughout the fermentation process. A smartphone app allows remote monitoring and control over the Internet from anywhere in the world — check temperatures, adjust punch schedules, and receive alerts without being in the winery.

A sampling tube allows samples to be withdrawn at any time without opening the fermenter. The sampling tube includes a temperature sensor for continuous monitoring.
